hi there, came across your website by chance. I am going to try this recipe very soon. They look really good! By the way these cookies are crisp and thin, not the chewy Mrs Field type of cookies right. I thought the crispy bits were cornflakes!

I tried the Cowgirl cookies and made a couple of modifications . . . I love the cornflake, oat, coconut thing happening in that cookie! Thank you! Now, I'm going to try the Cowboy cookie!:)

Hi there! Well, I am not sure if what I usually use is ACTUAL espresso powder, but I use the instant coffee granules. Like the Starbucks VIA! The ones I have at my house are the Nescafe brand, but they are the same thing. 🙂
