    turkey tortilla chip enchiladas

    Guess what time it is… H-E-B recipe post time! I honestly love these, they are so much fun. Half the fun is just waiting for the package and ripping it open once it gets here! I’m never sure what will be in it, so it’s always a surprise… the other half of the fun is figuring out which recipe I want to make once I see all the contents. My package for September contained Casa Magnifica Lightly Seasoned Corn Tortilla Chips, That Salsita, That Red Sauce, and Spicy Relish That Corn. Not pictured: Whataburger Mustard, H-E-B Mixed Berry Fruit Twists, Cookwell & Company Two-Step Chili Mix, and Peach Texas Tea! If you’re waiting for a dessert, I’ve definitely got my eye on that yummy sweet tea. 🙂 But for now, let’s talk savory deliciousness!


    These Turkey Tortilla Chip Enchiladas are super yummy, and perfect for those times when you want the enchilada flavor without the work! Who has the time to wrap all those tortillas up, anyway? This recipe is so easy, fast, and won’t disappoint. Make it next time you get home late, or are busy with homework, or well, maybe even when you’re busy watching the game!


    I wasn’t kidding when I said they were easy! Just cook up some onions, green bell peppers, ground turkey, and beans, and you’re ready to layer! Spray your favorite pan with nonstick spray, and lay down a generous layer of crushed up Casa Magnifica Tortilla Chips. Top with the turkey mixture, then top with cheese and corn relish. Finally, top with more crushed chips and red sauce! Bake for about 20 minutes, and you’re all done. Simple and delicious!

    Turkey Tortilla Chip Enchiladas
    Yields: about 4 servings

    1 bag Casa Magnifica Lightly Seasoned Tortilla Chips
    1 onion, roughly chopped
    1/2 cup frozen diced bell pepper
    1 lb lean ground turkey
    1/2 cup H-E-B’s That Salsita
    1/4 cup H-E-B’s That Red Sauce
    1 cup H-E-B’s Spicy Relish That Corn {also available mild}
    1 can Ranch Style Beans, drained and rinsed
    1 cup shredded cheddar cheese
    1 tbsp extra virgin olive oil

    Preheat the oven to 400F, and spray a 9×13 baking dish with nonstick spray; set aside. In a large nonstick pot, heat the oil, onion, and bell pepper. Once it starts to sizzle, add in the turkey, and season generously with salt and pepper. Add in the rinsed Ranch Style beans, and cook until turkey is no longer pink. Add the 1/2 cup of That Salsita to the turkey mixture, and cook on medium until most liquid evaporates. Once everything is cooked through, you are ready to layer! Grab large handfuls of tortilla chips, crush them, and place them on the bottom of your prepared baking dish. You should use about half the bag! Top the chips with the turkey mixture, then top that with the cheese and the corn relish. The relish is sweet, so I would suggest adding a little more seasoning at this point! Top with additional crushed tortilla chips, and drizzle That Red Sauce on top. Bake in your preheated oven for about 20 minutes, until cheese is melted and sauce on top has been soaked up by the chips. Serve immediately with sour cream and extra toppings!
