    Happy happy Thursday! This week has flown by, yet at the same time, has passed so slowly. I feel like I've gotten a lot done, but I also feel like the days have been so short! This must be what it's like to have nothing but free time. I've been super productive in non-school ways and I've loved it! I've been reunited with my nanny babies, I've been cleaning out my room and closets and dressers, I've been sanding and refinishing my bedroom furniture for next year, AND I've started preparing stuff for a wedding that's in two weekends! This will be the second wedding I've baked for, and I couldn't be more excited!! I will have an extensive, super-detailed post about EVERYTHING once that happens {and I won't forget my camera like LAST TIME. Ugh}, but for now, let's talk easy, fast, simple cake!

    This cake is so ridiculously easy to make, has minimal prep, and seriously only requires 4 ingredients! Sliced peaches and freshly whipped cream are optional {but supremely delicious}. Just take white cake mix, replace the water with Central Market/HEB Organic Peach Bellini Italian Soda, and prepare according to package directions. The bubbles in the soda make the cake super fluffy and moist, and the peach flavor is a sweet and subtle surprise. Bake in a large cake pan and that's it! Top with homemade whipped cream, and decorate with fresh sliced peaches... it's basically stupid-easy but looks gorgeous and tastes great! This is a great summery, crowd-pleasing dessert.     Ingredients
    • 1 box white cake mix
    • 3 egg whites
    • 1 cup Organic Peach Bellini Italian Soda
    • ⅓ cup vegetable oil
    • 1 cup heavy whipping cream
    • 1 peach, sliced thinly
    • 1 teaspoon vanilla extract
    Instructions
    1. Preheat the oven to 350F. Spray a 10 in cake pan with nonstick spray, and set aside. {note: you can also use a smaller pan and have a longer bake time, or split it into two pans}
    2. In a large bowl, combine the cake mix, egg whites, and vegetable oil.
    3. Pour in the soda, and slowly mix using a hand mixer. Once everything is incorporated, beat on medium speed for 1-2 minutes, until creamy and smooth.
    4. When the oven is ready, pour batter into prepared pan, and bake for 25-27 minutes {longer if using smaller pans}, until cake is golden brown, and a toothpick inserted in the center comes out with only a few moist crumbs.
    5. Remove from oven and let cool completely before topping.
    6. When cake is cooled off, pour the whipping cream into a medium bowl. Beat with hand mixer on high speed until light, fluffy, and smooth. Add in the vanilla, and beat it in.
    7. Spoon the fresh whipped cream on top of the cooled cake {and in-between, if you make two smaller cakes}, and top with slices of fresh peach.
    8. Serve immediately, and store leftovers in fridge!

      I saw this beautiful cake on Instagram and I had to come and read your post! I'd never have guessed you used a cake mix. Very cool! And yes, definitely something simply yet impressive to whip up on short notice for guests. This looks amazing!
