    tilapia scampi spaghetti | The Baking Fairy

    Happy Sunday! Is it really already Sunday? Yikes. This summer has been flying by! Between work and summer school, I have basically only a month left until "real" school is back in full swing. Sob, cry, saaaaad. To cheer you {me} up, I made a delicious, summery dinner that feels like it belongs in an Italian restaurant! I received a new sponsorship offer a couple of weeks ago from Healthy Solutions Spice Blends and I was beyond excited to work with them. I love using marinade mixes and spice mixes in my cooking, and I love that this company's products are all free of fillers, preservatives, and MSGs, and most are low sugar and low sodium, meaning they are perfect for a healthy lifestyle!     The spice flavors I chose to try were Shrimp Scampi, Herb-Crusted Tilapia, Pork & Poultry Mix, and Authentic Taco & Chili. For this recipe, I decided to use the Shrimp Scampi packet... on tilapia. Because I can't ever be trusted to follow directions 😉 Haha! Good news, the recipe turned out delicious! I marinaded the fish fillets in the shrimp scampi mix with some white wine and water for about 30 minutes, then quickly sauteed them in some olive oil. For the sauce, I used the same pan I had cooked the fish in, and added fresh diced tomatoes, more olive oil, and more white wine. I let the sauce simmer until the tomatoes got soft and juicy, then mixed the sauce with some angel hair pasta and topped with the tilapia. And that's it! This took me a total of 20 minutes cooking time, but it looked and tasted like it was straight from a nice Italian restaurant. Enjoy with some chilled white wine and all you'll be missing is the expensive price tag!

    Ingredients
    • 4 tilapia fillets
    • 1 box {1 lb} angel hair pasta
    • 4 tablespoon Shrimp Scampi Spice Blend Mix
    • 2 fresh tomatoes, diced
    • 2 tablespoon olive oil, divided
    • 1 tablespoon water
    • ½ cup white wine
    • salt and pepper flakes {optional}
    Instructions
    1. First, marinade the fish. Place the fillets in a shallow bowl, and sprinkle 2 tablespoon of seasonings over them. Top with the water and about ¼ cup of white wine, cover with plastic wrap, and let marinade for about 30 minutes.
    2. When ready to eat, bring a large pot of water to a boil and cook pasta according to package directions.
    3. In a large saute pan, heat up 1 tablespoon of olive oil on medium-high heat.
    4. When the oil is ready, put the fish and marinade in the hot pan, and cook for 2-3 minutes, then flip and cook for 1-2 minutes more, until the fish is flaky and white.
    5. Carefully remove the fillets from the pan, reduce heat to medium-low, and add the remaining white wine, olive oil, and diced tomatoes. Add in 2 more tablespoon of shrimp scampi mix.
    6. Cook sauce, whisking occasionally, for 5-6 minutes, until it simmers and the tomatoes start to break down and soften. Add a little salt and red pepper flakes at this point if desired. Add in a few spoonfuls of the pasta cooking water to thin out the sauce.
    7. To serve, mix sauce and angel hair together, plate, then top with tilapia fillets.
