    In my household, we have a mythical Ice Cream Container. It's a giant, 2-gallon container of chocolate ice cream. But... here is the kicker. None of us like chocolate ice cream. And none of us know how it got in our freezer. It's a real, actual mystery, y'all. Like, we have figured out that someone's friend at some point brought it over to share and just forgot it here. So since we don't like eating chocolate ice cream, we had to figure out a way to use it. We have been making these chocolate ice cream muffins at least once a week for the past couple of months and we are still not out of ice cream. I think the thing refills itself overnight. Not like that's a problem, because we're all pretty much obsessed with how good these muffins are, but still. Haunted ice cream.

    We seriously love these in our house though, not only because they're a way of using up the ice cream that's not just straight up eating it, but also because they are so easy! We started making these the Pinterest-famous way, with just ice cream and self-rising flour. And that way works, definitely, BUT since this is kind of cheap-o ice cream, the chocolate flavor of the muffins was super faint and subtle. And the muffins were kind of bread-y tasting. So we added a bit of sugar one time, added cocoa another time, started adding chocolate chunks... and here you go. The perfected chocolate ice cream muffin!

    So, if you ever find yourself with ice cream that you don't want to eat, these muffins are a perfect way to use it up! I imagine the regular recipe with just ice cream and flour works fine for other flavors of ice cream, too. My roommates and I have already decided that once we run out of this ginormous tub of chocolate, we want to try making vanilla muffins with blueberries. Because yes. If you end up making this with other flavors, I want to know how you like them! This recipe is super easy and fast, and a delicious, unexpected way to make muffins. Happy baking!

    Serves: 12 muffins
    Ingredients
    • 2 cups chocolate ice cream, melted
    • ¼ cup cocoa powder
    • ½ cup sugar
    • 1½ cups flour
    • 1 teaspoon baking powder
    • ½ teaspoon baking soda
    • pinch of salt
    • ½ cup chocolate chips
    Instructions
    1. Preheat oven to 350F.
    2. In a large bowl, mix together the melted ice cream, cocoa, and sugar until well combined.
    3. Stir in the flour, baking powder, baking soda, and salt. Finally, stir in the chocolate chips until everything is just combined {do not overmix}.
    4. Divide the batter evenly among 12 muffin cups, and bake for 10-12 minutes.
    5. Let cool slightly and enjoy!

      I made cake out of rocky road in an 8 x 8 pan. Very delicious. 4 Stars, but that could be my fault as I didn't add icing of any type.
