Hi Samantha! You can substitute the ricotta with softened cream cheese or mascarpone cheese. Because ricotta is already quite watery, the frosting will come out a bit thicker with the substitutions - you can use it as-is or add 1-2 spoonfuls of milk or heavy cream to thin it out!]]></description>
