Hi Marise! You can definitely make it without the caramel sauce as the cake itself is very moist and soft. I haven’t personally tested making it without sugar and I don’t have a lot of experience subbing dates for sugar, so I can’t tell you for sure. I don’t see why not, but the sugar also acts to add structure to the cake so it may never fully bake/solidify if you only use dates.
