Recipe type: Cookies
Serves: 36
  • 1 stick (1/2 cup) vegan butter
  • ⅓ cup creamy peanut butter
  • 2 very ripe medium bananas
  • 1 cup brown sugar
  • ½ cup white granulated sugar
  • 1 tbsp vanilla extract
  • 2 cups all-purpose flour
  • 1 cup quick-cooking oats
  • 1 tsp baking soda
  • ¼ tsp salt
  • 1 cup vegan chocolate chips
  1. In a small microwave-safe bowl, combine the vegan butter and peanut butter. Heat in 30 second increments until melted, smooth, and creamy.
  2. In a large bowl, add in your ripe bananas and mash until smooth. Add in the sugar, brown sugar, and vanilla extract, and mix to combine. Pour in the melted butter + PB mixture.
  3. To this, add your flour, oats, baking soda, and salt. Mix until the cookie dough comes together. Finally, fold in your chocolate chips.
  4. Allow cookie dough to chill for at least 30 minutes.
  5. When ready to bake, preheat oven to 350F.
  6. Line your baking sheets with silicone liners or parchment paper. Scoop out spoonfuls of the cookie dough, about 1.5 tbsp in size.
  7. Bake in preheated oven for 15 minutes, until golden brown and puffy. Cookies will flatten as they cool. Enjoy!
