Fulfill those fall dessert cravings with these easy and delicious Vegan Pumpkin Chocolate Chip Cookies! They are soft, perfectly spiced, and packed with gooey chocolate chips.

  • ⅓ cup vegan butter, softened (not melted)
  • ¼ cup granulated white sugar
  • ½ cup packed dark brown sugar
  • ⅓ cup pumpkin puree
  • 1 tbsp vanilla extract
  • 1¼ cups all purpose flour
  • ½ tsp baking powder
  • ½ tsp baking soda
  • ½ salt
  • 1 tsp pumpkin pie spice
  • 1 cup vegan chocolate chips
  1. In a medium bowl, beat together the vegan butter, white sugar, and brown sugar together until light and fluffy.
  2. Add in the pumpkin puree and vanilla, and beat until combined.
  3. Stir in the flour, baking powder, baking soda, salt, and pumpkin spice until the cookie dough comes together. Finally, mix in the chocolate chips.
  4. Refrigerate dough for 30-60 minutes until solid.
  5. When ready to bake, preheat oven to 350F and line 2 baking sheets with silicone liners or parchment paper. Scoop out cookies, and bake for 15-18 minutes until golden brown and delicious!
