Summer Fruit Clafoutis

- ¼ cup {1/2 stick} unsalted butter
- 3 eggs
- ¼ cup + 1 tbsp brown sugar
- ⅓ cup + 2 tbsp flour
- 2 tbsp whole milk
- pinch of salt
- ½ tsp vanilla extract
- 3-4 apricots
- 2 peaches
- 1 cup cherries
- Preheat the oven to 350F.
- Grab a 9-inch deep dish pie plate or cast iron skillet, place the butter in it, and place in the oven to melt as the oven heats.
- Wash all the fruit, remove pits, and cut into slices.
- In the bowl of a stand mixer with the whisk attachment, mix the eggs, salt, and brown sugar.
- Add in the flour and milk, and mix until smooth {batter will be runny}. Mix in the vanilla.
- Remove pan from oven, pour the butter into the batter, and combine.
- Using a pastry brush, evenly distribute the butter left in the pan to prevent sticking.
- Pour the batter into the prepared pan, and top with the cut fruit.
- Bake for 45-50 minutes, until top of cake is golden brown, and a toothpick inserted in the center comes out clean.
- Let cool slightly before cutting, and serve with powdered sugar and some whipped cream.
