Serves: 8
  • ¼ cup {1/2 stick} unsalted butter
  • 3 eggs
  • ¼ cup + 1 tbsp brown sugar
  • ⅓ cup + 2 tbsp flour
  • 2 tbsp whole milk
  • pinch of salt
  • ½ tsp vanilla extract
  • 3-4 apricots
  • 2 peaches
  • 1 cup cherries
  1. Preheat the oven to 350F.
  2. Grab a 9-inch deep dish pie plate or cast iron skillet, place the butter in it, and place in the oven to melt as the oven heats.
  3. Wash all the fruit, remove pits, and cut into slices.
  4. In the bowl of a stand mixer with the whisk attachment, mix the eggs, salt, and brown sugar.
  5. Add in the flour and milk, and mix until smooth {batter will be runny}. Mix in the vanilla.
  6. Remove pan from oven, pour the butter into the batter, and combine.
  7. Using a pastry brush, evenly distribute the butter left in the pan to prevent sticking.
  8. Pour the batter into the prepared pan, and top with the cut fruit.
  9. Bake for 45-50 minutes, until top of cake is golden brown, and a toothpick inserted in the center comes out clean.
  10. Let cool slightly before cutting, and serve with powdered sugar and some whipped cream.
