Tilapia Scampi Spaghetti

Serves: 4
  • 4 tilapia fillets
  • 1 box {1 lb} angel hair pasta
  • 4 tbsp Shrimp Scampi Spice Blend Mix
  • 2 fresh tomatoes, diced
  • 2 tbsp olive oil, divided
  • 1 tbsp water
  • ½ cup white wine
  • salt and pepper flakes {optional}
  1. First, marinade the fish. Place the fillets in a shallow bowl, and sprinkle 2 tbsp of seasonings over them. Top with the water and about ¼ cup of white wine, cover with plastic wrap, and let marinade for about 30 minutes.
  2. When ready to eat, bring a large pot of water to a boil and cook pasta according to package directions.
  3. In a large saute pan, heat up 1 tbsp of olive oil on medium-high heat.
  4. When the oil is ready, put the fish and marinade in the hot pan, and cook for 2-3 minutes, then flip and cook for 1-2 minutes more, until the fish is flaky and white.
  5. Carefully remove the fillets from the pan, reduce heat to medium-low, and add the remaining white wine, olive oil, and diced tomatoes. Add in 2 more tbsp of shrimp scampi mix.
  6. Cook sauce, whisking occasionally, for 5-6 minutes, until it simmers and the tomatoes start to break down and soften. Add a little salt and red pepper flakes at this point if desired. Add in a few spoonfuls of the pasta cooking water to thin out the sauce.
  7. To serve, mix sauce and angel hair together, plate, then top with tilapia fillets.
