chocolate ice cream muffins

Serves: 12 muffins
- 2 cups chocolate ice cream, melted
- ¼ cup cocoa powder
- ½ cup sugar
- 1½ cups flour
- 1 tsp baking powder
- ½ tsp baking soda
- pinch of salt
- ½ cup chocolate chips
- Preheat oven to 350F.
- In a large bowl, mix together the melted ice cream, cocoa, and sugar until well combined.
- Stir in the flour, baking powder, baking soda, and salt. Finally, stir in the chocolate chips until everything is just combined {do not overmix}.
- Divide the batter evenly among 12 muffin cups, and bake for 10-12 minutes.
- Let cool slightly and enjoy!
