  • 1 box Central Market/HEB Lemon Square Mix
  • ¼ cup lemon juice {about 1 lemon}
  • ¼ cup orange juice
  • 10 tbsp unsalted butter, softened
  • 3 eggs
  • 4-5 tbsp raspberry preserves
  • fresh raspberries, optional
  1. Preheat the oven to 350F, and line a 9x9 baking pan with parchment.
  2. In a small bowl, combine the softened butter and the crust packet from the Lemon Square Mix. Beat until a dough forms, then pour into the prepared pan, and pat down using your fingertips. Bake according to package directions.
  3. While the crust bakes, prepare the filling. Combine the filling packet, lemon juice, orange juice, and eggs, and beat until smooth and creamy.
  4. When the crust is done, remove from oven and turn oven down to 325F.
  5. Pour the filling mixture on top of the crust, and swirl in the raspberry preserves. Top with fresh raspberries if desired, then put back in oven and bake according to package directions.
  6. Let cool completely before cutting. Sprinkle with powdered sugar, and enjoy!
