Serves: 3 cups
  • 2 ripe avocados
  • 1 cup fresh spinach leaves
  • juice of 1 lemon
  • 3 cloves garlic
  • ¼ cup olive oil
  • 1 tsp salt
  • 1 tsp garlic powder
  • 1 tsp crushed chili flakes
  • pasta, to serve
  1. In a food processor, combine the garlic, avocado, lemon juice, spinach, and spices.
  2. Pulse until a thick cream forms, then drizzle in the olive oil, and blend until smooth and creamy.
  3. Cook pasta according to package directions, and save some of the pasta water when done.
  4. Mix in the pesto, adding the reserved pasta water if the mixture is too thick. Serve immediately!
