  • ¼ cup {1/2 stick} unsalted butter, melted
  • 3 eggs
  • ¼ cup + 1 tbsp sugar
  • ⅓ cup + 2 tbsp flour
  • 2 tbsp whole milk
  • pinch of salt
  • ½ tsp vanilla extract
  • 1 cup cherries, pitted
  • ⅓ cup sliced almonds
  1. Preheat the oven to 350F, and butter an 8-inch pie plate or cast iron skillet.
  2. In a medium bowl, whisk together the eggs, salt, and sugar until smooth and light.
  3. Add in the flour, milk, and vanilla, and finally whisk in the melted butter.
  4. Pour the batter into the prepared pan, and top with the cherries and almonds.
  5. Bake for 35-40 minutes, until a toothpick inserted in the center comes out clean.
  6. Serve as-is or with a sprinkle of powdered sugar on top.
