  • *for the batter*
  • 2 eggs
  • ½ cup white granulated sugar
  • ¾ cup packed dark brown sugar
  • ½ cup vegetable oil
  • 1 cup sour cream
  • 1 tsp vanilla extract
  • 2 cups unbleached all-purpose flour
  • ½ tsp baking soda
  • ½ tsp salt
  • 1 cup mini chocolate chips
  • *for the streusel*
  • 4 tbsp melted unsalted butter
  • ⅓ cup unbleached all-purpose flour
  • ⅓ cup old-fashioned oats
  • ⅓ cup packed dark brown sugar
  • ¼ tsp cinnamon
  • pinch of salt
  1. Preheat the oven to 350F, and spray a 9x5 loaf pan with nonstick spray {or line with parchment}.
  2. In a large bowl, whisk together the eggs and sugars. Add in the vanilla, oil, and sour cream, and mix until well-combined.
  3. Switch to a spatula, then pour in the flour, baking soda, and salt, mixing until just combined. Fold in the chocolate chips.
  4. Pour the batter into the prepared pan, then set aside to prepare the streusel.
  5. In a medium microwave-safe bowl, melt the butter. Stir in the flour, sugar, oats, cinnamon, and salt, and mix until large clumps form.
  6. Sprinkle the streusel on top of the batter, then bake for 55-60 minutes, until a toothpick inserted in the center comes out mostly clean. If the loaf gets a little too dark, you can cover it with foil until it finishes baking.
