Serves: 1 lb
  • 1 lb raw peanuts
  • ¼ cup agave syrup
  • ¼ cup coconut sugar
  • 1-2 tbsp peanut oil {as needed}
  1. Preheat oven to 325F, line a baking sheet with parchment, and spray with nonstick spray.
  2. In a large bowl, toss together the peanuts with the agave and coconut sugar.
  3. Spread in a single layer on the prepared sheet, and bake for 20 minutes, stirring halfway to prevent burning.
  4. Once peanuts are roasted, let cool completely before making peanut butter.
  5. When ready, pour peanuts into a food processor, and pulse until smooth and creamy. Add the peanut oil if needed to make things easier.
  6. Pour peanut butter into a jar with tight-fitting lid, and store in the refrigerator!
