Ingredients

  • 3 large sweet potatoes
  • 1 ½ cup unsweetened non-dairy milk {I used cashew}
  • 2-3 tablespoon maple syrup to taste
  • ½ teaspoon dried thyme
  • 1-2 teaspoon salt
  • 2 tablespoon vegan butter

Instructions

  • First, prepare the sweet potatoes by washing and peeling them.
  • Cut them into medium-sized cubes and place in a large pot.
  • Pour the milk over the sweet potato pieces and add a pinch of salt.
  • Bring the milk to a boil, then lower to a simmer, cover the pot, and allow the sweet potatoes to cook over medium-low heat until soft and falling apart. This should take 30-45 minutes.
  • When the sweet potatoes are completely soft and mushy, use a potato masher to smooth them out, and season with the maple syrup, thyme, vegan butter, and any additional salt.
  • Serve immediately!
