Ingredients

  • 2 ½ cups flour
  • 3 tablespoon granulated sugar
  • 1 tablespoon baking powder
  • ¼ teaspoon salt
  • ½ cup {1 stick} unsalted butter cold and cut into small cubes
  • 1 pint fresh blackberries
  • 2 tablespoon fresh lime juice
  • zest of 1 lime
  • 2 eggs
  • ½ cup heavy cream
  • 4 oz cream cheese
  • *for topping: heavy cream turbinado sugar

Instructions

  • First, preheat oven to 400F. Line a baking sheet with silicone or parchment paper.
  • In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  • Add in your cubes of cold butter, and using a pastry blender, mix in until the mixture resembles coarse sand.
  • Add in the lime juice, lime zest, and blackberries, and toss gently to combine.
  • In a small bowl, whisk together the eggs and heavy cream and add into the dough. Mix until it comes together.
  • Finally, add in the cream cheese in small pieces, mixing until JUST combined (you want the cream cheese to stay in chunks throughout the dough!)
  • Generously flour a clean working surface, knead the dough a few times, then gently pat into a circle about 1 inch thick. Cut with a biscuit cutter, or into triangles like traditional scones.
  • Place scones on prepared baking sheet, then brush with the reserved heavy cream and sprinkle on the turbinado sugar.
  • Bake for 15 minutes, until puffy and golden brown. If the tops are a little pale, you can carefully broil for 1-2 minutes until a bit more golden. Enjoy warm!
