sweet & spicy tropical fruit salsa

Ingredients

  • 1 fresh mango
  • 1 can pineapple tidbits {save the juice!}
  • 5-6 fresh strawberries
  • ½ onion
  • 1 jalapeno
  • 2-3 cloves of garlic
  • juice of 1 lime
  • handful of cilantro
  • salt garlic salt, and cumin, to taste

Instructions

  • First, rinse and dry all fruits and vegetables.
  • Drain the canned pineapple, saving the juice. If desired, you can rinse the pineapple bits to remove more of the sugary juice. Shake all the excess liquid out, and place in a large bowl.
  • Peel the mango and chop it into small cubes, adding these to the bowl.
  • Chop the strawberries and onion, and also add these in.
  • Cut the jalapeno in half, removing the ribs and seeds depending on how spicy you want your salsa, and finely chop.
  • Finally, peel the garlic cloves, smash them, and finely chop these as well.
  • Mix everything together in the bowl, and add in the lime juice and cilantro.
  • Add the seasonings to taste. Serve immediately with chips or tacos, or refrigerate for later.
