I LOVE this recipe. I've made it three times and every time I use more applesauce and less oil...I'm down to only 2 TBS oil now....and it is STILL moist and yummy! I make it in a mini bundt pan (Half the recipe) and it looks adorable and festive. Even the non-vegans in the family say "it tastes like a real chocolate cake", lol, the strongest endorsement you can get! Thank you SO much!!

Fantastic cake! I've made this recipe many times. In the cake, I substitute coffee for the water and use cacao powder.
My glaze is:
1 Cup confectioner's Sugar
3 Tbs Cacao
1/2 tsp vanilla extract
3 Tbs coffee
(Whisk wet into dry and use immediately)

This has become my go-to cake for everything! The recipe is easy to follow, most of the ingredients I keep on hand anyway, only one bowl for mixing, and it is SO moist and delicious! Recently, I used crushed oreos instead of sprinkles...yum!
