I drained almost the whole can of Rotel—for 1 second I forgot so I ended up draining about half the can. I used Pepper Jack, American and a little white Cheddar. As suggested, I used good cheeses. I added all the spices. This recipe is going into my repertoire of will definitely make again. YUM!]]></description>
