I have several “baby” eggplants but they’ve been on the plant for some while as a result of the growing season got too cool. I’m going to try them but am afraid they’ll be too bitter. 
I can feel your stress regarding PA school. I’m a retired PA (2008).
I graduated from the University of Oklahoma in 1984. It was a great career, worked in ERs and Urgent Care. 
Congrats on the end of the grueling program and a great future.]]></description>

					<description><![CDATA[The overall flavor of this dish was good but I would make a couple changes that I think would greatly improve the dish.  1) Use less salt! It turned out super salty, I would use 1/2 the salt or less, 2) Do not put water in the bottom of the dish prior to baking it, it made the eggplants float and flip sideways spilling the stuffing out!  Perhaps put some sauce in the bottom of the dish to add a little moisture during baking instead.]]></description>
