Hi Jessi! I think they would be great as muffins! I would do 350F for 20-25 minutes. Just test them with a toothpick inserted in the center and add more time if they are still wet! Let me know how they turn out!

I didn't even use the glaze and it was the perfect amount of sweetness. Both of my teens loved this as well! We avoid dairy but not eggs, so I just used an egg instead of the the flax "egg". I also subbed 1:1 GF flour plus 3/4 tsp xanthan gum-- all these modifications worked well. With the crazy amount of zucchini I have in my garden, I'm so happy to have a delicious recipe with half the sugar as my traditional zucchini bread!
