- 1 refrigerated pie crust
- 2 cups pitted cherries fresh or frozen & thawed, halved
- 3 oz dark chocolate broken into small pieces
- ΒΌ cup white granulated sugar
- 1 tablespoon cornstarch
- 1-2 tablespoon nondairy milk + 1-2 tablespoon granulated sugar for the crust
Preheat oven to 375F.
Lay out the refrigerated pie crust onto a baking sheet lined with parchment or a silicone liner.
In a medium bowl, combine the cherry halves with the white sugar and cornstarch. Add in the chocolate pieces.Mix until combined.
Place the cherry mixture in the center of the prepared crust, leaving about 2 inches all around for the crust.
Gently fold the edges of the crust up and over onto the filling, overlapping slightly as you go.
Brush the crust with the milk, and sprinkle on the sugar.
Bake in preheated oven for 45-50 minutes, until the crust is golden brown and the cherry filling is bubbling and thick.
Let cool slightly, and serve with vegan whipped cream and a shaving of chocolate on top!
