- 1 can green jackfruit in brine
- 1 cup barbecue sauce
- salt & pepper to taste
- *for the slaw*
- 1 bag coleslaw mix
- 1 Granny Smith apple
- ¼ cup fresh cilantro
- ¼ cup vegan mayonnaise
- 2 tablespoon cup apple cider vinegar
- ¼ teaspoon garlic powder
- 12 slider buns to serve
- salt & pepper to taste
First, prepare the jackfruit. Drain the brine and rinse under cold water.
Place jackfruit in medium pot, breaking up the larger pieces. Pour the barbecue sauce on top, and turn heat on to medium.
Bring sauce to a boil, then cover and turn heat to low. Allow jackfruit to simmer for 20-30 minutes, until fruit is soft and sauce has thickened. Add salt & pepper as needed.
To make the slaw, first whisk together the mayonnaise and apple cider vinegar in a large bowl. Add the garlic powder and S&P as needed.
Add in the bag of prepared coleslaw.
Cut the granny smith apple into thin matchsticks, and add it to the slaw mixture. Finally toss in the cilantro.
Mix the slaw until everything is coated in the dressing.
To serve, spoon some barbecue jackfruit on each slider bun and top with the slaw. Enjoy!
