agave roasted peanut butter

Ingredients

  • 1 lb raw peanuts
  • ¼ cup agave syrup
  • ¼ cup coconut sugar
  • 1-2 tablespoon peanut oil {as needed}

Instructions

  • Preheat oven to 325F, line a baking sheet with parchment, and spray with nonstick spray.
  • In a large bowl, toss together the peanuts with the agave and coconut sugar.
  • Spread in a single layer on the prepared sheet, and bake for 20 minutes, stirring halfway to prevent burning.
  • Once peanuts are roasted, let cool completely before making peanut butter.
  • When ready, pour peanuts into a food processor, and pulse until smooth and creamy. Add the peanut oil if needed to make things easier.
  • Pour peanut butter into a jar with tight-fitting lid, and store in the refrigerator!
