personal brunch pizzas

Ingredients

  • 1 1- lb ball of pizza dough
  • 6 strips bacon
  • 8 oz breakfast sausage {about half of a standard roll}
  • 1 cup frozen potatoes o'brien
  • 1 tablespoon oil
  • 2 cups shredded mild cheddar cheese
  • ½ cup tomato sauce
  • 4 eggs
  • 1 tablespoon Italian herb seasoning
  • salt & pepper to taste
  • 2-3 green onions diced
  • Minute Maid Orange Juice to serve

Instructions

  • First, cook the sausage. In a large skillet, crumble sausage and cook on medium-high heat until lightly crisp and browned, with no pink remaining. Transfer to a small bowl.
  • In the same skillet, cook bacon slightly less than your preferred crispiness. Remember it will cook a little more in the oven! Once ready, crumble and set aside in another small bowl.
  • Finally, make the potatoes. Add the tablespoon of oil (if needed), and pour in the potatoes in one single layer. Sprinkle the Italian herb seasoning on top, as well as the salt and pepper.
  • Cook for 5-6 minutes undisturbed, then flip and cook for 4-5 minutes more. Keep cooking until potatoes are crispy on the outside and cooked through.
  • Next, preheat the oven to 550F. Use a pizza stone if you have one, but if not, line a baking sheet with parchment paper.
  • Prepare your clean work surface and lightly dust with flour. Divide your ball of pizza dough into 4 equal pieces, and roll each out into a small circle.
  • Transfer the pizzas to the baking sheet. Top each pizza with some tomato sauce, followed by the bacon, sausage, potatoes, and cheese. Make a small well in the middle of the toppings, and crack an egg on each. Sprinkle the egg with more salt and pepper.
  • Bake pizzas for 12-15 minutes, until crust is golden brown and the egg white is set.
  • Sprinkle the green onions on top, and serve immediately with Minute Maid Orange Juice!
  • *NOTE: If you want to prep ahead, cook the bacon, sausage, and potatoes ahead of time, and just assemble the pizzas when needed!*
