- 2 cloves of garlic
- 3 tablespoon coconut milk
- ¼ cup shredded coconut
- juice and zest of 1 lime
- 2 teaspoon soy sauce
- 2-3 tablespoon fresh cilantro leaves
- 3 tablespoon olive oil
- ½ jalapeno seeded
- ½ teaspoon salt
- 1 ½ lbs shrimp peeled and deveined
Combine all ingredients, except the shrimp, in a food processor, and blend until smooth and creamy.
Toss the shrimp with the sauce, and allow them to marinade for at least 30 minutes.
When ready to cook, heat up your gas grill to medium heat.
Get a large piece of foil, and spray generously with nonstick spray. Pour the shrimp and marinade mixture in the middle in a single layer, and fold and secure the tin foil package so nothing leaks.
Cook for about 10-12 minutes, until shrimp are pink and cooked through. Serve immediately over rice or with your favorite side dish!
