coconut lime shrimp packets

Ingredients

  • 2 cloves of garlic
  • 3 tablespoon coconut milk
  • ¼ cup shredded coconut
  • juice and zest of 1 lime
  • 2 teaspoon soy sauce
  • 2-3 tablespoon fresh cilantro leaves
  • 3 tablespoon olive oil
  • ½ jalapeno seeded
  • ½ teaspoon salt
  • 1 ½ lbs shrimp peeled and deveined

Instructions

  • Combine all ingredients, except the shrimp, in a food processor, and blend until smooth and creamy.
  • Toss the shrimp with the sauce, and allow them to marinade for at least 30 minutes.
  • When ready to cook, heat up your gas grill to medium heat.
  • Get a large piece of foil, and spray generously with nonstick spray. Pour the shrimp and marinade mixture in the middle in a single layer, and fold and secure the tin foil package so nothing leaks.
  • Cook for about 10-12 minutes, until shrimp are pink and cooked through. Serve immediately over rice or with your favorite side dish!
