In a medium saucepan, combine the olive oil and chopped onion. Turn heat onto medium-high, and cook until onion has softened.
Add in the ground beef and spices, and cook until meat is browned and no longer pink. If using a fattier meat, drain the excess fat.
Add in the tomato sauce, turn heat onto low, and cover. Let the chili simmer for 30-45 minutes, until thickened.
When ready to serve, transfer the chili to an oven-safe container, and top with the cheese. Place under the broiler for a couple of minutes to melt the cheese, and serve immediately with H-E-B Texas Dippers corn chips. Enjoy!
