    Hello, friends! Football season is fast approaching {yay!} and we all know what that means... tailgates and tons of food! Oh, yes. I've paired up with H-E-B once again today to bring you the ultimate cheesy, savory snack for your tailgate. Frito Pie Dip! Frito Pie is a southern staple made of layers of corn chips, chili, and tons of cheese. Once I saw the Texas Dippers corn chips in my package, Frito pie was the first thing that came to mind! How could I make such a messy, delicious dish into a party-friendly option? Well, turn it into a dip of course.

    I was honestly shocked at how quickly and easily this came together! I simply whipped up a small batch of chili, let it simmer for a bit until it thickened, and then just poured it into an oven safe dish and topped it with a veritable mountain of cheese. Popped that sucker under the broiler for a minute to melt the cheese, and I was already done. This is serious comfort food, and seriously easy.

    Now, I know this baby isn't the most photogenic recipe I've ever made, but trust me when I say it tastes divine! Even my mom and younger brother, probably the pickiest eaters I've ever met, gave it a very enthusiastic two thumbs up. I personally just whipped up a fast, small-batch chili for this, but you can use your own favorite recipe, or even {gasp!} use the canned stuff in a pinch. I took it easy with the seasonings, just going with some onion powder, garlic powder, and paprika to account for the picky eaters, but feel free to give yours more of a kick if you desire. 🙂

    Serves: 6
    Ingredients
    • ½ lb lean ground beef {I used 93/7}
    • ½ small onion, chopped
    • 1 8oz can tomato sauce
    • garlic powder, onion powder, paprika, chili powder, and salt, to taste
    • 1 tablespoon olive oil
    • 1 cup shredded mild cheddar
    • H-E-B Texas Dippers corn chips, to serve
    Instructions
    1. In a medium saucepan, combine the olive oil and chopped onion. Turn heat onto medium-high, and cook until onion has softened.
    2. Add in the ground beef and spices, and cook until meat is browned and no longer pink. If using a fattier meat, drain the excess fat.
    3. Add in the tomato sauce, turn heat onto low, and cover. Let the chili simmer for 30-45 minutes, until thickened.
    4. When ready to serve, transfer the chili to an oven-safe container, and top with the cheese. Place under the broiler for a couple of minutes to melt the cheese, and serve immediately with H-E-B Texas Dippers corn chips. Enjoy!
