{vegan} strawberry peach cobbler

Ingredients

  • *for the crust*
  • 2 cups all-purpose flour
  • ¼ cup sugar
  • 2 tablespoon baking powder
  • 4 tablespoon EarthBalance {or dairy butter or coconut oil}, cold
  • 1 ¼ cup milk
  • 1 teaspoon vanilla extract
  • salt
  • *for the filling*
  • 1 lb fresh strawberries hulled and quartered
  • 4-5 peaches sliced
  • ¼ cup sugar
  • 1 cup orange juice

Instructions

  • In a medium bowl, whisk together the flour, salt, and baking powder.
  • Add in the butter, and mix it in using your fingertips or a pastry cutter until the texture resembles coarse crumbs.
  • Add in the milk and vanilla extract, and mix until a dough forms. Place the dough in the fridge while you prepare the fruit.
  • Preheat the oven to 400F.
  • In a cast iron skillet, combine the strawberries, peaches, sugar, and orange juice. Turn heat on medium, and cook the fruit mixture, stirring occasionally, until it cooks down to a runny jam consistency.
  • Drop the dough on top of the fruit mixture in spoonfuls, then place in preheated oven and bake for about 20 minutes, until the dough is cooked through.
  • If your crust looks a little white, you can broil the pan for a few minutes to help it become golden brown and delicious!
  • Serve with ice cream!
