Turn on the waffle iron to allow it to heat while you prepare the batter.
In a large bowl, whisk together the flour, sugar, baking powder, salt, and apple pie spice.
Add in the oil, milk, vanilla, and eggs, and mix until just combined.
Add in the chunks of apple and the pecans, and stir in.
Spray waffle iron with nonstick spray, and cook waffles. Around ¾ cup of batter is a good amount per waffle!
Serve immediately with butter, maple syrup, and additional pecans.
