    apple pie waffles | The Baking FairyToday is Saturday Brunch-Day! As opposed to Sunday Funday. I don't know about y'all, but my Sundays are made especially for sleeping {and sometimes homework}. Saturdays, well,  I can deal with waking up at a decent time and actually cooking some nice breakfast. I'm home for the weekend, so I decided to surprise my family with some fancy Apple Pie Waffles for brunch! These are super easy and so delicious. This recipe uses 3 apples and makes 6 waffles, so really you're eating a half an apple per waffle. Basically, this is like a health food. Equivalent to a fruit salad, right?

    I've been having so much fun this fall season making desserts WITHOUT pumpkin! I started off with these Sweet Potato Snickerdoodles, followed up with some Browned Butter Pear Muffins, and now here are some Apple Pie Waffles. Yes, I made that Pumpkin White Hot Chocolate, but that's a drink, not a dessert. Important distinction. My little blogger brain is working on a savory pumpkin soup, so come back and check on that soon! Meanwhile, make these waffles and swoon at how unbelievably delicious and easy they are! Chock-full of fresh apple chunks and a sweet spiced kick, they are pure fall perfection when topped with maple syrup and a thick pat of butter. Yum!

    Serves: 6 waffles
    Ingredients
    • 1¾ cups flour
    • ¼ cup corn starch
    • 2 tablespoon sugar
    • 1 tablespoon baking powder
    • ¼ teaspoon salt
    • 2 eggs
    • 1¾ c milk
    • ½ c cooking oil
    • 1½ teaspoon vanilla
    • 2 teaspoon apple pie spice mix
    • 3 apples, peeled and finely diced
    • ½ cup pecans, roughly chopped
    • nonstick spray
    • butter and maple syrup, to serve
    Instructions
    1. Turn on the waffle iron to allow it to heat while you prepare the batter.
    2. In a large bowl, whisk together the flour, sugar, baking powder, salt, and apple pie spice.
    3. Add in the oil, milk, vanilla, and eggs, and mix until just combined.
    4. Add in the chunks of apple and the pecans, and stir in.
    5. Spray waffle iron with nonstick spray, and cook waffles. Around ¾ cup of batter is a good amount per waffle!
    6. Serve immediately with butter, maple syrup, and additional pecans.
