Summer Fruit Clafoutis

Ingredients

  • ¼ cup {½ stick} unsalted butter
  • 3 eggs
  • ¼ cup + 1 tablespoon brown sugar
  • cup + 2 tablespoon flour
  • 2 tablespoon whole milk
  • pinch of salt
  • ½ teaspoon vanilla extract
  • 3-4 apricots
  • 2 peaches
  • 1 cup cherries

Instructions

  • Preheat the oven to 350F.
  • Grab a 9-inch deep dish pie plate or cast iron skillet, place the butter in it, and place in the oven to melt as the oven heats.
  • Wash all the fruit, remove pits, and cut into slices.
  • In the bowl of a stand mixer with the whisk attachment, mix the eggs, salt, and brown sugar.
  • Add in the flour and milk, and mix until smooth {batter will be runny}. Mix in the vanilla.
  • Remove pan from oven, pour the butter into the batter, and combine.
  • Using a pastry brush, evenly distribute the butter left in the pan to prevent sticking.
  • Pour the batter into the prepared pan, and top with the cut fruit.
  • Bake for 45-50 minutes, until top of cake is golden brown, and a toothpick inserted in the center comes out clean.
  • Let cool slightly before cutting, and serve with powdered sugar and some whipped cream.
