Vegetarian Nachos with Homemade Baked Chips

Ingredients

  • 12 Mixla tortillas {or corn tortillas}
  • nonstick spray
  • 1 package Neat Mexican Mix
  • 2 eggs + water {called for on Neat package}
  • 1 can black beans rinsed and drained
  • 1 cup chunky salsa
  • ½ cup HEB's The Salsita
  • 2 cups shredded Mexican cheese
  • sour cream to serve

Instructions

  • Preheat the oven to 400F. Line two baking sheets with foil, and set aside.
  • Using a sharp knife, cut each tortilla in 6 even triangles, and spread the chips evenly on the prepared pans. Spray with nonstick spray, and sprinkle with salt.
  • Bake in preheated oven for 15 minutes.
  • Meanwhile, prepare the Neat product according to package directions, and set aside.
  • When chips are ready, remove from the oven, and turn it on to Broil.
  • Grab 4 oven-proof plates {or a casserole dish}, and place some chips inside.
  • Top with some Neat, beans, salsa, salsita, and cheese, then top with more chips and more toppings. Be sure to load up the cheese on the top!
  • Place the casserole or plate in the broiler, and cook for a few minutes. Watch carefully, the cheese can burn very easily!
  • As soon as the cheese is melted, remove dishes from oven and serve immediately with sour cream!
