    vegetarian nachos with homemade baked chips

    I made you nachos... vegetarian nachos! And I even made the chips myself. Sorta. These turned out to be some of my favorite nachos that I've ever had! I used HEB's Mixla Tortillas, which are made with a blend of flour and corn, cut them into triangles, and baked them. Because these were made with actual corn tortillas, versus store-bought extra-thin corn chips, they were sturdier and were able to hold up loads of toppings without getting soggy or breaking! And besides, I don't think there is anything better than warm, salty, fresh-out-the-oven tortilla chips. If you're the observant kind {and I'm sure you are}, you might have noticed I have some stuff that looks like meat in my nachos. But didn't I say these are vegetarian? Well, I have a secret....

    I used this cool new meat replacement product called Neat! It comes as a powder in a package, and contains things like ground pecans and ground garbanzo beans. You mix it with eggs and water and get the weird goop on the left {kinda gross, right?}. But then, you cook it in a pan with some olive oil and it looks just like ground beef! Having tasted it plain, I can tell you that the Mexican Mix is spiced to taste just like taco meat, the only thing that's a bit different is the texture. I honestly really enjoyed it, and I would definitely buy it again! I know that Neat has different flavors, so I'm curious to try them and use them in other recipes.

    These nachos are super simple and fast to make, and I loved trying these new products! I thought that this recipe was a great way to try out a meat replacement like Neat without too much commitment. Nachos are easy to customize, so you could easily add more or less meat, beans, salsa, whatever. Anything goes as long as you use plenty of cheeeeese. 🙂

    Ingredients
    • 12 Mixla tortillas {or corn tortillas}
    • nonstick spray
    • 1 package Neat Mexican Mix
    • 2 eggs + water {called for on Neat package}
    • 1 can black beans, rinsed and drained
    • 1 cup chunky salsa
    • ½ cup HEB's The Salsita
    • 2 cups shredded Mexican cheese
    • sour cream, to serve
    Instructions
    1. Preheat the oven to 400F. Line two baking sheets with foil, and set aside.
    2. Using a sharp knife, cut each tortilla in 6 even triangles, and spread the chips evenly on the prepared pans. Spray with nonstick spray, and sprinkle with salt.
    3. Bake in preheated oven for 15 minutes.
    4. Meanwhile, prepare the Neat product according to package directions, and set aside.
    5. When chips are ready, remove from the oven, and turn it on to Broil.
    6. Grab 4 oven-proof plates {or a casserole dish}, and place some chips inside.
    7. Top with some Neat, beans, salsa, salsita, and cheese, then top with more chips and more toppings. Be sure to load up the cheese on the top!
    8. Place the casserole or plate in the broiler, and cook for a few minutes. Watch carefully, the cheese can burn very easily!
    9. As soon as the cheese is melted, remove dishes from oven and serve immediately with sour cream!

      These really do look like they have meat on them! I have never tried NEAT but everything is worth trying at least once. I make my own tortilla chips too and they are so much better than store bought and way less salt. Thanks for sharing on Gluten Free Fridays.
