    mint lemonade | The Baking Fairy

    The weather this past couple of days has been so warm and glorious, and I couldn't be happier! I thoroughly enjoy these balmy, breezy days, between the cold of the winter and the awful, excessive heat of the summer. These kinds of days can usually be counted on two hands, so please excuse me for my enthusiasm! To celebrate, I made you a cool, refreshing drink to enjoy while relaxing the day away on the porch or by the pool. Lemonade, with the unexpected, yummy addition of mint!

    My mom is a crazy-good gardener, and I like to joke that she has a super-extra green thumb. Anything she plants ends up growing to epic proportions, and her mint plant is absolutely no exception!  She doesn't have a little pot of mint, or a mint plant. She has a mint BUSH. What?! Who even manages that?! So anyway, seeing the abundance of mint I had available, I decided to make something yummy with it. So here you go! This beverage is seriously so easy and fast, but it's great for when you have company! Tell anyone you made them homemade mint lemonade, and they will be totally impressed. Unfortunately, even all the mint I used in this recipe hardly made a dent in the huge amount of mint in my backyard... so keep your eyes peeled for more minty recipes coming soon. Happy drinking!

    Serves: 4
    Ingredients
    • 9 lemons, plus more for garnish
    • 3 cups water
    • 6 teaspoon Stevia {12 packets}*
    • 2 cups fresh mint leaves
    Instructions
    1. Wash the lemons and the mint.
    2. Juice the lemons, and pour the liquid in a pitcher. Add in the water and the Stevia, and combine using a whisk.
    3. Tear the mint leaves by hand, and add them into the pitcher.
    4. Slice an additional lemon, and add the slices to the pitcher as well.
    5. Place the pitcher in the fridge, and let the flavors infuse for at least 2 hours.
    6. Serve over ice with additional mint leaves and lemon slices!
    7. *Note: the Stevia can be replaced by ½ cup sugar*
