    Happy Thursday! I made you a lil something-something today. After basically abandoning my blog for a whole week, I'm sure you're wondering where the heck I've been. Well, I've been making preparations for my customer's wedding! It's this Saturday, so tomorrow I will be baking AAAALLL day. 150 cupcakes and 7 layer cake, say whaaaa? I'm super excited! I've been working on cute cupcake topper signs and lace cupcake wrappers, and shopping for all the ingredients. On a completely unrelated note, I've also been working on repainting my bedroom furniture! And I finally finished it last night. WHEE! So I haven't been blogging but I've definitely been working on some blog posts for y'all. ANYWAY, back to these yummy bars!

    I stumbled upon these treats last night while Pinteresting, and I couldn't resist trying them out! My house always has an abundant supply of Special K, so I was excited to use the cereal for something other than eating it with milk. I'm not trying to embarrass my mom, but she has enough Special K in the pantry to get us through a zombie apocalypse... Like, I'm talking about at LEAST 2o boxes. Maybe one day I'll take a picture ๐Ÿ˜‰ This recipe uses just 6 cups, which is most of a big box, but I think you can conclude even this big batch didn't affect my mom's giant stockpile. I'll be trying to find other fun recipes for this cereal and I'll report back soon! In the meanwhile, I'm curious... have you ever made Special K Bars before? Do you prefer these, or Rice Krispie Treats?

    Serves: 15
    Ingredients
    • 6 cups original Special K cereal
    • 1 cup white granulated sugar
    • 1 cup corn syrup
    • 12 oz creamy peanut butter {most of a regular jar}
    • 1 cup semisweet chocolate chips
    Instructions
    1. First, prepare a 9x13 pan by either lining it with wax paper or spraying with nonstick spray. Set aside.
    2. In a large nonstick pot, combine the sugar and corn syrup.
    3. Turn the heat on medium-low, and whisk the mixture continuously until the sugar dissolves and the syrup is smooth and lump-free.
    4. Add in the peanut butter, and whisk until smooth.
    5. Add in all of the cereal, and mix into peanut butter-sugar mixture, crushing flakes slightly as you go.
    6. Immediately pour mixture into your prepared pan. You can use a spoon or spatula sprayed with nonstick spray to help you smooth it down and even it out.
    7. Now, prepare the topping. Place the chocolate chips in a small nonstick pan, and heat over medium heat, whisking continuously until melted and smooth.
    8. Immediately pour the chocolate over the prepared bars, smoothing it down and evening it out.
    9. Place bars in fridge for at least one hour before serving. Cut into pieces and enjoy!

      This recipe has been a family favorite for years! I always say since it is made with Special K it is full of vitamins and a "healthy" treat. We call them scotch-a-roos. #gethimfed

      I first found this recipe in the 1970's when they were called "Special Chews". Rather than all chocolate for the topping they used half chocolate and half butterscotch which gave it a delightful flavor.

      Sometimes when I make these, they fall apart or get hard. Does that have something to go with how long you boil the corn syrup and sugar?

        Hi Donna! Thanks for your comment. I haven't made these in a long time so I can't say for sure, but I would think that would be it!! If you cook sugar for too long, it will start to caramelize and then it will be more hard and crunchy once it cools off. I would be careful to heat the sugar and corn syrup until the sugar is JUST melted and then remove from heat altogether! Hope this helps ๐Ÿ™‚
