On a cleaned, floured surface, divide the dough into three even mounds.
Take the first, and roll it out into a narrow rectangle, making sure to not make the dough too thin. Scatter your ham along the prepared dough, trying to stay in the center. Roll up the dough into a long tube, and seal the ends with a little water.
Set the dough aside, and repeat with the two other pieces of dough, stuffing one with the mushrooms and one with the mozzarella... be sure to season the mozzarella before rolling up the dough!
Once all three rolls are ready, start braiding, pulling and stretching the dough a bit as you go.
Once the braid is completed, join the two ends into a braid.
Transfer to a lightly greased jelly-roll pan, then cover with a clean tea-towel, and put in a warm place for at least one hour to rise.
When ready, preheat the oven to 400F. Lightly brush the braid with a little bit of olive oil, then bake for 30-35 minutes, until golden brown and crunchy. Let cool slightly, then slice and enjoy!
