healthy chunky monkey cookies

Ingredients

  • 3 large ripe bananas mashed
  • 1 teaspoon vanilla extract
  • ¼ cup vegetable oil
  • 2 cups rolled oats
  • cups almond meal you can easily make it yourself by blasting almonds in a food processor till it resembles coarse flour!
  • cup unsweetened toasted coconut
  • ½ teaspoon cinnamon
  • ½ teaspoon salt
  • 1 teaspoon baking powder
  • 1-2 teaspoons Sweet N Low or honey optional and my own addition, I felt the cookies needed to be a bit sweeter
  • 1 cup dark chocolate chips

Instructions

  • Preheat oven to 350F. Prepare two cookie sheets and line with parchment paper.
  • In a large bowl, combine the mashed bananas, vanilla and oil.
  • In a separate bowl, combine the oatmeal, almond flour, coconut, cinnamon, baking powder, salt, and Sweet N Low/honey, if using. Whisk together, then add the dry ingredients to the wet. Mix till thoroughly combined, then fold in chocolate chips.
  • Using a tablespoon cookie scoop, place the cookies about an inch apart on the prepared cookie sheets.
  • Bake for 15-20 minutes, until golden brown and delicious!
