Preheat oven to 350F. Prepare two cookie sheets and line with parchment paper.
In a large bowl, combine the mashed bananas, vanilla and oil.
In a separate bowl, combine the oatmeal, almond flour, coconut, cinnamon, baking powder, salt, and Sweet N Low/honey, if using. Whisk together, then add the dry ingredients to the wet. Mix till thoroughly combined, then fold in chocolate chips.
Using a tablespoon cookie scoop, place the cookies about an inch apart on the prepared cookie sheets.
Bake for 15-20 minutes, until golden brown and delicious!
