    birthday cake oreo brownies

    So, uhh.... this happened today.

    Followed by this. I'm sorry, okay? Well, no, that's a lie. Sorry I'm not sorry, I just like trashing up boxed brownie mix. I can't even help myself! I just like to put marshmallows in it or put it in banana bread or make it with Diet Coke or, you know... whatever. I definitely made some blondies with the Birthday Cake Oreos when they first came out, but by the time I found them, it was already towards the end of their "limited edition" lifetime. I wasn't able to find them for months after that. So imagine my surprise when I found some at my grocery store last week! Last package. It got in the shopping cart by itself, I swear.


    Seriously though, these are SO good. So chocolatey and fudgy and rich. It's like all of my favorite trashy junk foods put together! Your thighs probably won't approve, but your sweet tooth will. Ohhh, yeah. 


    Birthday Cake Oreo Blondies
    Yields: one 8x10 pan

    1 box Ghirardelli brownie mix + ingredients called for on box {or your favorite recipe for a 9x13 pan}
    ½ cup chocolate chips
    about 18 Birthday Cake Oreos, plus more for garnish

    Preheat the oven to 325F. Spray your pan with nonstick spray, and line with foil. Spray the foil and set aside.
    In a medium bowl, combine the brownie mix, eggs, water, and oil called for on the box {or make your own brownies!}. Stir in the chocolate chips. Spread a thin layer of brownie batter in the bottom of your prepared pan, then top with your Oreos! I needed 18 to fill the bottom of my pan, you might need more or less. Top with remaining brownie mix. Crush some Oreos with your hands, and place them on top of your brownie! Press them down slightly to make sure they stick. Bake for 40-45 minutes, until a toothpick inserted in the center comes out mostly clean, with some fudge and crumbs. Let cool completely, and enjoy!
