    banana protein pancakes

    It's Sunday morning! Have you had breakfast yet? If not, then you should seriously consider making these pancakes. They are perfect! I totally love them because they are super easy to make, the recipe is simple to remember, and they are healthy. Yay! Whoever said healthy food doesn't taste good has obviously never tried these little babies.

    These are so good and easy that I honestly don't make them just for breakfast... sometimes, I'll cook up a batch and keep them on hand as snacks! My favorite way to eat these is plain because I'm lazy and it's easier that way, but feel free to experiment! I'm personally not a syrup kinda girl, but I bet they would taste great with a generous pour of maple goodness on top. Or you can do what I do sometimes, which is slap some peanut butter on them. 🙂 Any way you eat them, they're sure to be delicious. So what are you waiting for? Get in the kitchen and make some pancakes!


    Banana Protein Pancakes
    Yields: about 15 small pancakes

    1 ripe banana
    1 cup whole wheat flour
    1 cup milk {dairy or non-dairy, any fat content you'd like}
    1 egg
    1 scoop vanilla protein powder
    1 heaping teaspoon baking powder
    1 teaspoon cinnamon

    Heat your griddle or pan over medium-low heat, and spray with nonstick spray. In a medium bowl, mash the banana with a fork. Add in the egg and milk, and mix well. Add the flour, protein powder, baking powder, and cinnamon, and mix until just combined. When the griddle is ready, pour 1-2 tablespoon of batter for each pancake. Cook until the top starts to bubble, then flip and cook for a couple more minutes. Serve immediately with syrup, peanut butter, or just plain!
