    You know what's romantic? Making your beloved dinner and dessert from scratch on Valentine's Day, including some perfectly festive Chocolate-Covered Strawberry Cupcakes that you can indulge in together. Know what's not romantic? Having over a dozen of these little sugar bombs left the day after and you eating them all by yourself in your pajamas not knowing what to do with all those leftovers. Enter... this recipe! Perfectly romantic AND perfectly portioned. That's right... this cupcake recipe makes just TWO adorable little cupcakes with none left to go to waste!

    This recipe came to me after much deliberation... I pretty much have NO Valentine's Day recipes on this blog, so I wanted my first one to be super cute and extra special! Strawberries are one of my favorite fruits, and it's no secret that I could live on chocolate alone. So I figured, why not combine the two into a cupcake version of everyone's favorite indulgence? These cupcakes are chocolatey and delicious, and topped with a simple strawberry cream cheese frosting. The cherry {or I guess strawberry} on top of the cupcake is a fresh chocolate-dipped strawberry! Beautiful to look at and seriously delicious to eat. Don't be mistaken, these cupcakes are definitely extra sweet and sugary and over-the-top.... and that's what makes them perfect for Valentine's Day.

    Chocolate-Strawberry Cupcakes for Two

    Ingredients

    • for the cupcakes
    • 3 tablespoon all-purpose flour
    • 3 tablespoon white granulated sugar
    • 1 ½ tablespoon butter softened
    • 1 tablespoon + 1 teaspoon cocoa powder
    • 1 egg white
    • 1 ½ tablespoon milk
    • ¼ teaspoon vanilla extract
    • ⅛ teaspoon baking soda
    • ¼ teaspoon baking powder
    • pinch of salt
    • for the cream cheese frosting
    • 2 oz cream cheese
    • 1 tablespoon butter softened
    • 2 cups powdered sugar {more or less depending on how stiff you would like the frosting}
    • 1-2 fresh strawberries mashed
    • chocolate-dipped strawberries for garnish

    Instructions

    • Preheat the oven to 350F.
    • In a medium bowl, whisk together the softened butter and sugar {for the cupcakes} until smooth and slightly fluffy.
    • Add in the egg white, and beat again until fluffy and well-incorporated.
    • Whisk in the vanilla and milk, followed by the cocoa, salt, baking powder, and baking soda. Once combined, whisk in the flour and mix until just combined.
    • Divide the batter evenly between two or three cupcake liners {I ended up making three cupcakes with the batter I had}!
    • Bake cupcakes for 15-18 minutes, until a toothpick inserted in the center comes out totally clean.
    • Let the cupcakes cool completely while you prepare the frosting.
    • In a medium bowl, using a hand mixer, combine the softened butter and cream cheese until creamy and well-combined.
    • Wash two strawberries, remove the green tops, and squeeze them into the bowl of frosting with your hands. Using the hand mixer, beat the mixture until the frosting turns pink and only small pieces of strawberry are visible.
    • Add in the powdered sugar, ½ cup at a time, until desired consistency is reached.
    • Once the cupcakes are completely cooled, decorate as desired {I used a Wilton 1M tip}, and top with a chocolate-covered strawberry. Share and enjoy!

      Strawberries are one of my favorites too. I used to pick them out of our garden in California when I was a kid. I love how this makes only two!

      I love strawberries, but have never really paired them with chocolate....I know I maybe the only one who has not had a chocolate covered strawberry! =) Will be making these soon!! Shaunna @Tempting Thyme

      I made a very similar recipe right before Valentine's Day as well. Mine had whole strawberries inside. Love that yours have chocolate covered strawberries on top!
