    vegan cappuccino brownies | The Baking Fairy

    By now, most of you are familiar with my famous "vegan best friend." She makes an appearance in most of my blog posts, which I guess is only normal considering we spend like 72.6% of our time together every day. She feeds me, I feed her, we {pretend} to study together... it's a beautiful friendship. I finally convinced her to start a food blog a few months ago, but for some reason we hadn't done guest posts/blog swaps yet... til NOW. We're going with a chocolate + coffee theme, and you can find her scrumptious vegan Mocha Cheesecake HERE! Y'all. It is unbelievably good! She took pictures for her blog, and then we proceeded to eat the entire thing straight from the pan with forks. And we have no shame. The base is made with cashews and almond milk, not full-fat cream cheese, so it's basically like eating a salad anyway.

    For my guest post, I decided to make brownies {because I have a little bit of a brownie obsession} and they turned out amazing! To go with out chocolate and coffee theme, I made these rich, thick, ridiculous brownies with a hint of coffee in the batter, and topped them with a creamy, buttery cappuccino frosting. They are the perfect way to satisfy your sweet tooth, and they are the perfect companion to a rich, slightly bitter cup of espresso or cappuccino. Yum! Oh, and did I mention they are absolutely, positively vegan? Yessss. Share these with all of your friends, and I can promise that nobody will be missing the butter or eggs.
