    Hello, dearest readers! We are at t-minus 2 DAYS to Valentine's Day, and the time to whip up something sweet and special for your beloved has come. Today, in collaboration with H-E-B, I'm sharing these absolutely adorable and deceivingly easy German Chocolate Cake Bites! The base for these little babies is actually traditional chocolate Texas Sheet Cake, cut out into cute little hearts, stuffed with homemade coconut-caramel filling, and topped with the sheet cake glaze and pecans. These look fancy, but don't be fooled! They start with a box mix and couldn't be simpler to whip up. Let's get to baking!

    Can you believe I've actually never made German chocolate cake before? Like, not even from a mix with the coconut stuff from a can. I prefer to stay away from canned frosting, but having never made the caramel-coconut mixture myself, I thought it would be hard. Not so! I managed to whip my homemade version up with just a few ingredients I already had in the house, and in a few minutes! Easy peasy, and so yummy. I decided to forgo the traditional pecans in the filling as I already had some in the glaze 🙂

    Like I mentioned earlier, the base to these delicious little German chocolate cake bites is Texas sheet cake! H-E-B recently released a brand new box mix for the beloved Texas classic that includes both mix for the cake and for the glaze! Pick this up at your local H-E-B, and the only thing you'll need to make from scratch for these treats is the coconut filling. Just grab some sweetened coconut flakes, butter, brown sugar, eggs, and heavy cream while you're at the store, and you're good to go.

    Ingredients

    • 1 box H-E-B's Texas Sheet Cake Mix
    • eggs butter, etc. called for on box mix
    • *for the coconut filling*
    • 1 cup sweetened shredded coconut
    • 3 tablespoon unsalted butter
    • 1 egg yolk
    • ⅓ cup brown sugar
    • ⅓ cup heavy cream
    • ½ teaspoon vanilla extract
    • pinch of salt

    Instructions

    • Preheat the oven to 350F, and spray a 9x13 baking sheet with nonstick spray.
    • Prepare cake mix according to package directions, pour in the prepared pan, and bake for 15-20 minutes until cake is firm and a toothpick inserted in the center comes out clean.
    • Let cake cool slightly, then run a knife along the edges to loosen it from the pan, and invert it out onto a clean surface.
    • Using a small heart cookie-cutter, cut out as many hearts as you can from the cake.
    • When ready to fill, combine the butter, egg yolk, brown sugar, and heavy cream in a medium saucepan over medium-high heat, whisking continuously, until the mixture is smooth and creamy. Cook for 5-7 minutes, until thickened, then remove from heat, and stir in the salt, coconut, and vanilla.
    • Set aside to cool {it will thicken more as it cools off, too}.
    • When ready to assemble, spread some of the coconut mixture on half of the cut out hearts, and top them with the remaining hearts to make little cake sandwiches. To minimize the mess, set the sandwiches on top of a cooling rack set on top of a baking sheet to catch any extra glaze that may drip.
    • Prepare the sheet cake glaze according to package directions, and spoon a bit on top of each cake bite.
    • Let the glaze set {it will become opaque}, then enjoy!

      I adore German Chocolate Cake and these are adorable! I love the flavors and play with it so much - can't wait to make these, maybe for my dad's birthday in April - it is his favorite cake, after all.

      Please, please please send me the recipe for German Chocolate Cake ICING from a southern Fairytale recipe. It was the most mouth watering cake I ever made. I made it once and I don't have the recipe and was hoping you could send it to me as I can't locate it on the computer. My family keeps asking when I'll make it again. Thank you. P.S. We all give it a 10 rating.
