    This summer, change up your cookout game and try throwing pizza on the grill! This Grilled Pizza is topped with homemade pesto, burrata, and baby tomatoes for a fresh, scrumptious combination.

    Hi friends and happy Wednesday! Today, we continue our #CookoutWeek fun with another unusual food for your grill... PIZZA! Just when you thought pizza couldn't get any better, it's now dressed up and ready for summer. This Grilled Pizza with Pesto, Burrata, and Baby Tomatoes basically combines all your favorite hot-weather foods into one savory, mouthwatering dish. Yes, please! All you need is some store-bought pizza, burrata, and baby tomatoes, and then we are making the pesto from scratch. But in a pinch... store-bought is just fine and I don't judge. 😉

    In case you guys are new to the party, let me catch you up. This week is #CookoutWeek, and I have paired up with over FIFTY other food bloggers to bring you summery recipes all week, as well as a giveaway! OH YES. You can get all the details and you can enter to win on my post from Monday. So the other day, I shared how to grill salad and today we are gonna grill some pizza. My personal challenge for this week was to find some unusual, veggie-friendly foods to throw on the grill to show that there really is more to the grill than just steaks and chicken and burgers! Who needs to eat meat when you got GRILLED PIZZA?! Not us, that's who.

    Here is the bottom line - as much as I love the convenience of store-bought stuff, homemade seems to always just taste better! And pesto is definitely no exception. I know it seems like so much effort to make it from scratch for this recipe, but I promise it's so worth it! And all you need is basil, garlic, parm, olive oil, pine nuts, and a pinch of salt. Throw it in the food processor and blend, blend, blend until your'e rewarded with creamy, aromatic goodness! It's seriously perfect on this grilled pizza, especially when paired with zesty baby tomatoes and that decadently creamy burrata. Honestly, the day they make vegan burrata is the day my life will be made. Until that day... I may hold onto my dairy card just for that 😉 ha!

    I hope grilled pizza makes an appearance on your dinner tables sometime this summer! You can top it with whatever your heart desires, but I think this pesto, burrata, and baby tomato combination is a winner. Happy cooking!

    Ingredients

    • 1 lb store-bought pizza dough {you can find a link to my homemade dough above}
    • 1 cup baby tomatoes halved
    • 12 oz burrata {I like buying the pack of 4 minis rather than one big one}
    • 2-3 tablespoon pine nuts
    • *for the pesto*
    • 1 cup basil leaves
    • 1 cup spinach
    • 3-4 tablespoon olive oil
    • 3 tablespoon pine nuts
    • 3-4 cloves garlic
    • ¼ cup parmesan cheese
    • salt to taste

    Instructions

    • First, prepare the pesto. In a food processor, combine the basil, spinach, pine nuts, garlic, and parmesan. Turn on the food processor, and slowly add in the olive oil until pesto becomes creamy and smooth. Add salt to taste and set aside.
    • Next, heat up your grill to 500-550F. Gently stretch out your pizza dough into a rounded shape {keep in mind it will get stretched more when you transfer to the grill}, and lightly brush or spray with olive oil.
    • When grill is ready, gently place pizza dough oil-side down on grill and cook for a few minutes, watching carefully - it cooks quickly! While it cooks, lightly spray or brush oil on the exposed side.
    • After about 4 minutes, check your pizza dough - the bottom should be cooked and you are ready to flip.
    • As soon as you flip the pizza, spread the pesto on top and add the baby tomatoes, burrata, and pine nuts. Cook for about 4 minutes longer, until crust is cooked through.
    • Serve immediately!
