
I've been having so much fun this fall season making desserts WITHOUT pumpkin! I started off with these Sweet Potato Snickerdoodles, followed up with some Browned Butter Pear Muffins, and now here are some Apple Pie Waffles. Yes, I made that Pumpkin White Hot Chocolate, but that's a drink, not a dessert. Important distinction. My little blogger brain is working on a savory pumpkin soup, so come back and check on that soon! Meanwhile, make these waffles and swoon at how unbelievably delicious and easy they are! Chock-full of fresh apple chunks and a sweet spiced kick, they are pure fall perfection when topped with maple syrup and a thick pat of butter. Yum!

apple pie waffles
Ingredients
- 1 ¾ cups flour
- ¼ cup corn starch
- 2 tablespoon sugar
- 1 tablespoon baking powder
- ¼ teaspoon salt
- 2 eggs
- 1 ¾ c milk
- ½ c cooking oil
- 1 ½ teaspoon vanilla
- 2 teaspoon apple pie spice mix
- 3 apples peeled and finely diced
- ½ cup pecans roughly chopped
- nonstick spray
- butter and maple syrup to serve
Instructions
- Turn on the waffle iron to allow it to heat while you prepare the batter.
- In a large bowl, whisk together the flour, sugar, baking powder, salt, and apple pie spice.
- Add in the oil, milk, vanilla, and eggs, and mix until just combined.
- Add in the chunks of apple and the pecans, and stir in.
- Spray waffle iron with nonstick spray, and cook waffles. Around ¾ cup of batter is a good amount per waffle!
- Serve immediately with butter, maple syrup, and additional pecans.
