    oreo cheesecake brownie bars | The Baking Fairy

    Happy Saturday, friends! Today, I am sharing this ridiculously indulgent mash-up of a dessert. It has a fudgy brownie base topped with a fluffy cheesecake layer and studded with big chunks of Oreos! You'd think this would be one of those overly sweet, makes-your-teeth-ache kind of dessert, but the bittersweet brownie base and the slightly tart cheesecake balance each other perfectly, resulting in a bar that is rich while being just sweet enough. This might not be the best recipe to share the day right after the Halloween sugar excess, but I just couldn't resist. These are too good to not share!

    I came up with these bars as a way to use up some mint Oreos I had bought on impulse and didn't know how to use, but by the time I got around to actually making these, those cookies had already been devoured, so I had to go out and buy another package. Ooops. This is the life of a blogger, y'all. At that point, I decided that regular Oreos would probably taste better anyway, so I guess it worked out in the end! That being said, I'm sure you can use any kind  you want and they will taste fabulous! Birthday Cake Oreos, anyone? I'm thinking yes. These use boxed brownie mix, and the cheesecake layer takes just a couple of minutes to whip up, so they are actually a lot easier than you'd think! Honestly, the hardest part is letting them chill in the fridge overnight. I know it's rough, but you'll be rewarded with delicious, perfectly fluffy cheesecake bars!

    Serves: 9 pieces
    Ingredients
    • 1 pouch brownie mix {made for 9x9 pans}
    • oil, egg, and milk for brownie mix
    • 2 8oz packages cream cheese
    • ¼ cup sour cream
    • 2 eggs
    • ½ cup sugar
    • 1 teaspoon vanilla
    • 2 cups Oreo cookies, roughly crushed {most of 1 package}
    Instructions
    1. Preheat the oven to 325F, and line a 9x9 baking pan with parchment or foil that's been sprayed with nonstick spray. This is really important!
    2. In a medium bowl, prepare brownies according to package directions.
    3. Pour batter into prepared pan and bake for about 30 minutes. It's okay if they're still a little soft!
    4. In another medium bowl, using a mixer, beat together the cream cheese, sour cream, vanilla, and sugar until fluffy and lump-free.
    5. Add in the eggs, one at a time, beating well after each addition.
    6. Add in ¾ of the crushed Oreos, and beat with the mixer {this will help crush them up more!}
    7. When the brownies are cooked, remove from oven, pour the cheesecake layer on top, and sprinkle the remaining Oreos on top.
    8. Return pan to oven, and bake for 40 minutes longer. Cheesecake should only be slightly jiggly in the center, if at all!
    9. Remove from oven, and let them cool to room temperature, then refrigerate overnight. I mean it!
    10. Once they are chilled, remove from the pan using the parchment or foil, and cut into 9 even squares. Store leftovers in the fridge!
