    This one-bowl Blueberry Lemon Snack Cake is so simple to make! Lemon batter is combined with juicy berries and crunchy sugar topping for an easy dessert.

    Berry season is finally upon us and I am SO excited! This means that not only are berries fresh and delicious and widely available, it also means I've been able to find them on sale for dirt cheap. Ohhhh yes. I was at the grocery store the other day and blueberries were on sale for like $1 a pint so you best believe I stocked up. The only logical next step was to, of course, put said blueberries in cake. You're gonna love this Blueberry Lemon Snack Cake!

    I love cake just as much as the next person {if not more}, but there is definitely a special place in my heart for easy, one-bowl cakes that require no frosting and no frills. You can call them snack cakes, breakfast cakes, lazy cakes, whatever. All I know is that they are pretty much the best thing ever! This blueberry lemon snack cake combines a rich, buttery, lemony batter with tons of juicy blueberries, and a generous handful of turbinado sugar on top for some crunch. So simple and SO incredibly good!

    Okay so now I actually have to be semi-serious. I am starting my Masters in Physician Assistant Studies today {and it's so weird because I'm currently typing this on Sunday but this recipe will go live Monday pretty much as I'm already IN CLASS SO GAH} and I am sooooo excited about this new chapter of my life!!!! As for the blog, of course I can't abandon it because it's been my baby for nearly 6 years, and I've put so much blood, sweat, and tears into this thing that it's definitely not going anywhere. However, obviously my priorities will be changing a bit, so while I'll be trying to post at least once a week, I'm just going to have to play it by ear from now on. So don't think I've abandoned you! I'm still here! I'll just be buried behind piles of anatomy textbooks and scrubs. Don't forget about me. 😉

    Serves: 9
    Ingredients
    • ½ cup {1 stick} unsalted butter, at room temperature
    • zest of 1 lemon {2 tbsp}
    • 1 teaspoon lemon extract
    • 1 teaspoon vanilla extract
    • ¾ cup + 2 tablespoon granulated white sugar
    • 1 egg
    • 2 cups all-purpose flour
    • 2 teaspoon baking powder
    • 1 teaspoon baking soda
    • ½ cup lemon Greek yogurt {you can sub plain Greek yogurt or sour cream and add more lemon zest!}
    • 6 oz fresh blueberries
    • 1-2 tablespoon turbinado sugar, for topping
    Instructions
    1. Preheat the oven to 350F, and line a 8x8 baking dish with parchment paper.
    2. In a large bowl, using a whisk or handheld mixer, beat the butter, white sugar, and lemon zest until creamy and fluffy.
    3. Add in the vanilla and lemon extracts, followed by the egg.
    4. Stir in one cup of the flour, along with the baking powder and baking soda. Mix in the lemon Greek yogurt, and then finally stir in the rest of the flour.
    5. Gently fold in the blueberries, and pour the batter into the prepared pan. Top with the turbinado sugar, and bake for 40-50 minutes, until a toothpick inserted in the center comes out mostly clean. Enjoy warm or at room temperature!

      This looks so yummy! Any chance it would work well as a cupcake?? Have you ever tried that or have any suggestions? Thanks!

        Hi Liz! That sounds like a great idea! I actually have not tried making these into cupcakes. I will say the batter is quite thick and dense so if anything, maybe adding a bit of milk to the batter to thin it out would help. I would hate for your cupcakes to come out too dense. Let me know how it works out for you!!
